My Dream on wheels

I’m Bill Belair, owner of the Valley Eats food truck.

Ever since I was a child, I’ve been fascinated by food, always poking around the kitchen wondering how such delicious meals were made. I grew up watching the Galloping Gourmet, Julia Childs, and the Cajun Chef, and dreamed of one day inspiring others just as they had inspired me.

My career as a chef took me across the globe, from Miami to Mexico, Jamaica, and beyond. Throughout my travels, I was influenced by the flavors and spices of so many different cultures. And, after many years in Miami, my wife and I moved to South Lake Tahoe, where for the last 15 years, we’ve called this beautiful place home. I loved working in Tahoe's restaurant and food industry in everything from fine dining and catering to casual (but utterly delicious) barbecue…

I learned and grew in each establishment I cooked in, but I still yearned for more. I dreamed of sharing my own culinary creations with the masses. I knew, with a little luck and a whole lot of hard work, that my passion and experience meant my dream was within reach. Working by myself, for myself, has taken a great amount of dedication to my craft, and a serious amount of hope but it has all culminated in the Valley Eats food truck, which opened in May of 2022.

My love of food and travel is one of the reasons a mobile eatery and catering company was so inspiring to me. I can travel from place to place and share my menu with people from all walks of life. My mission is to infuse the flavors of my travels into every dish I serve. 

The Valley Eats truck is my dream on wheels, and I hope you love it as much as I do.
